Cooking with soda water or pop (as they call it down South)

RICHMOND — It amazes me how things can turn out when you add pop (I am a southern gal) to a recipe. I have tried some of these recipes I am sharing with you just to let you know it can be done.

7-UP OR SPRITE BISCUITS

INGREDEINTS:

2 cups of Bisquick

1/2 cup sour cream

1/2 cup 7-up or Sprite

1/4 cup melted butter

DIRECTIONS:

Add sour cream and Bisquick together. Add the pop. This dough will be soft to the touch. Sprinkle additional Bisquick on to a board and gently pat the dough out to desired thickness.  (About 1 inch). Use a biscuit cutter or a glass to cut the biscuits. Place the melted butter into a 9x9 pan. Place biscuits in the pan and bake in a 450 degree oven for 8-10 minutes.

GLAZE FOR A MEAT LOAF

Pour a 10 oz. bottle of a coke product into a saucepan. Cook on high till the product is reduced for 10 to 15 minutes. Add half cup of ketchup, one tablespoon of mustard and one clove of minced garlic. Let simmer for 10 to 15 minutes. Remove and pour over entire meat loaf. I usually bake for 45 to 1 hour at 350 degrees.

Another way to use pop is in your crock pot. This is a good recipe for use of pop as a meat tenderizer.

CROCK POT TENDERIZER FOR MEAT

Place your choice of meat (roast or stew meat) in a crock pot. Add one 12 oz. can of a Coke product. Add one packet of onion soup mix. Set the crock pot on the low setting. Allow the meat to cook for at least 10 hours.

You may remember my story a couple of weeks ago about my experience with Dr. Pepper and it blowing up in the drug store parking lot.

I really thought it was a sign to give it all up — wrong. I am still addicted to Diet Dr. Pepper.

My favorite use of pop is to put a package of salted peanuts into my Dr. Pepper. Please tell me there are other nut lovers out there who do this as well.

One of my friends one day thought I was drinking a pop with bugs in it. Oh, the treats we carry from our childhood. Growing up on a peanut farm in Gorman, Texas, there was only way to drink a great pop and that was with peanuts in the bottle.

I can’t let you leave without giving you my favorite recipe with the use of POP.

COCA COLA CHOCOLATE CAKE

INGREDIENTS:

1 cup of coca cola

1/2 cup oil

1/2 cup margarine

3 tablespoons cocoa

2 cups sugar

2 cups flour

1/2 teaspoon salt

2 eggs

1/2 cup buttermilk

1 tsp baking soda

1 tsp vanilla



Frosting: 1/4 lb margarine, 3 tbsp cocoa, 6 tablespoons milk, 1 tsp vanilla, 1/2 cup chopped pecans, 1 lb powdered sugar.

DIRECTIONS:

In a pan bring coca cola, oil, margarine and cocoa to a boil; mix the sugar, flour and salt.

Pour in the boiling liquid and beat well.

Add the eggs, buttermilk, soda and vanilla and mix well

Pour into a greased and floured pan. Bake at 350 degrees for 25 minutes.

For the frosting: In a pan, combine the cocoa and milk and heat until the butter melts. Beat in the remaining ingredients and spread on warm cake.
