Soups to warm the soul on a cold winter's night

RICHMOND — I do hope we have a white Christmas. Being a native of San Antonio, the snow is such a beautiful gift that this area receives from time to time.. Here are some good soup recipes to enjoy in case that snow storm comes our way this month.

I remember Belle Jackson's(Mary Lee) mother yelling at her in the middle of Boone Street when Belle was trying to ride a mope head up Boone Hill in the worst snow storm I had ever experienced.. She made it up there but heaven only knows how she made it back.

Back to my subject of soups. There are so many to choose from that I thought I would give you some very simple ones to try. I hope you enjoy this one.

5- ITEM SOUP

Ingredients:

2 cans of beans not drained. I use whatever I have on hand. Kidney beans or pinto beans work the best

2 cans of diced tomatoes'. One might try one can of diced and one can of Rotel type. That is if you like it hotter. Do not drain the tomato's.

1 can of cut up corn not drained

1 package of Ranch Dressing powdered mix

1 package of taco seasoning. If you are watching the salt intake, use only the spice cumin. Use about 1 tablespoon.

Directions:

Place all ingredients in a large sauce pan and heat for about 30 minutes on a low heat.

Serve with chips and cheese and sour cream on top.

I need to tell you another story about the cold winter weather. Bernal Parker who I think is the greatest business person I ever have known. When this great snow storm came, he talked me into riding down a hugh hill behind the Christian Church here in Berea on the hood of a car. I thought we were going to be in Richmond in about 4 minutes we were going so fast. If that was not enough to scare the life out of me, we then rode down the hill on a pair of bed springs with about 10 others. I did fall off of that one and did not have to climb as far as the others back to the top of the hill...Oh the great life....

Kim Decoste provided me with a soup recipe from the Diabetic Clinic at the Madison County Health Department. It is so important for  the diabetic to pay attention to the fiber in one's meal plan daily.

    Hi!
    Refreshing. That’s the word one TV weatherman described the upcoming days when temperatures will be in the 70s with virtually no humidity and lots of sunshine. Can you believe that in the middle of July? We can live with that, can’t we? We may even get close to setting a record for morning lows later this week. This has certainly been the year for strange weather!
