I spent a couple of weeks this past month in Texas. One of my best friends who lives in the Dallas area developed the best recipe to use bran in a muffin. I have found this to be a great breakfast meal epically if one is one the go and no time to stop and fix a meal. Just pop into the microwave oven to reheat
BUTTERMILK BRAN MUFFINS
1 stick of butter (1/2) cup
1 cup of sugar
2 cups of buttermilk
1 cup of water
Don't worry if the mixture looks curdled.
2 1/2 cups all purpose flour
2 1/2 tsp baking soda
1/2 tsp salt
3 cups bran, preferably unprocessed
Optional: 1/2 to 1 cup golden raisins,
or 1/2 to 1 cup dried cranberries,
1 cup walnut pieces
(I add whatever I have on hand.
Slowly add the dry mixture to the buttermilk mixture. Do not over mix. Add 1 cup white raisins and/or dried cranberries. Let sit 30 minutes or more for the bran mixture to absorb some of the liquid. Stir the batter gently to blend again. Fill sprayed muffin tins (or use paper liners). Bake @ 375 degrees for about 25 minutes. This makes about 24 muffins. Refrigerate if not eaten within several days. Reheat to soften muffins. A great source of fiber. I pick up this bran at the local health food stores.
I was traveling across Oklahoma when the tornado hit Moore. My travel buddy just happen to have to need the restroom and we went into a gas station only we were told to go to the bathroom along with about 50 others. I just knew something bad was going to happen, as I made a joke to her just before we stopped because my pastor from church had just called me to tell me about this bad weather.
I told her if the pope calls we for sure will have to stop and, lo and behold, he did not call, but we got to shelter. No more kidding about the pope and phone calls for me. What a tragedy they all suffered around us. We got out ok but grateful to be alive and not hurt. Some dude flushed the toilet while we were all in there and scared you know what out of us all. At least we were in a toilet if that happened.
This muffin has a new twist in the ingredients.
Makes 12 muffins
1 lg egg, slightly beaten
1 cup of milk
1/4 cup melted margarine
1 cup dry bread crumbs
Stir and set aside.
Sift together, 1 cup of flour, 1 Tablespoon sugar, 1/2 tsp salt and 1 Tablespoon baking powder
Fold dry ingredients into liquids, Stir just until all is moistened. Fill greased muffin tins 2/3 full. Bake at 375 degrees for 25 minutes.
I was in the western part of Texas and never would I have believed how short the supply of water is to those folks. The yards have no green grass, epically in the Odessa area. In the town of Sweet Water I was told they are recycling their sewer waste to drinking water. I could not believe this one.
I had to pay 50 cents for a glass of water. One of my aunts, who happens to live in the city, is having to have a water well dug in her back yard hoping they hit water. So the next time you run that extra time in the shower or the kitchen sink, stop and cut the supply off. We could be faced with the same situation if we are not saving as well.
